Rinse black-eyed peas. Place in a pot with sorghum stems and 1.2 litres water. Bring to boil.

Cook the peas on medium heat for 30–40 min until about 70% tender — they should still have some bite.

Remove and discard the sorghum stems (the liquid will have turned dark reddish-brown — this is correct).

Wash the rice until water runs clear. Add to the pot with the peas and their liquid.

Add salt. If the liquid does not fully cover the rice, add a little more water.

Cover tightly and cook on low heat 25–30 min until rice is cooked through and liquid is absorbed.

Fluff gently and serve with your choice of shito, fried plantain, boiled egg, gari, and spaghetti.
