
Simple Vegetarian Jollof Rice

Blend tomatoes, red peppers, scotch bonnets, and 1 onion until smooth.

Heat oil in a wide pot. Fry the sliced onion until golden, about 8 min.

Add tomato paste; stir and fry 5 min until it darkens slightly.

Pour in the blended tomato mixture. Cook on medium heat 20 min, stirring, until reduced and the raw smell is gone.

Add stock, bay leaves, thyme, coriander, paprika, salt, and pepper. Bring to a boil.

Wash the rice until the water runs clear. Add to the pot — liquid should just cover the rice.

Cover tightly, reduce to the lowest heat, and cook 30 min. Do not lift the lid for the first 20 min.

Check: the rice should be cooked and slightly dry. The bottom crust (kanzo) is intentional and prized.

Remove bay leaves, fluff gently, and serve.
